Vegan Chickpea Spread. This recipe came about as a bit of an accident and as they say the mother of invention is necessity. I needed some healthy, easy to transport, vegan picnic type food in about 20 minutes. We decided to go kayaking to Newcastle Island and the word was, we were bringing food to eat part way on the trip. We like to paddle for awhile, talk a lot, drift, and slowly paddle into one of the beaches on the island and eat our food. A bit of a free style picnic.

Where we paddle to is stunning. Its called Newcastle Island http://newcastleisland.ca/and is part of the Snuneymuxw First Nations land. https://www.snuneymuxw.ca/ You can take a little mini ferry there, paddle over, some might even swim. When you get there, you can walk around the island, have a picnic or family get together, geocache, camp or just relax. It is so wonderful to have something so lovely in our back yard.

I decided to make a chickpea spread and was originally thinking of the Chickpea Not Tuna Sandwiches and wanted to make something like that. I checked online, got some ideas and put this together. it was tasty if I do say so myself…let’s check it out….

The next day we had the leftover spread with some butter lettuce, dark rye bread and pea shoots – a perfect lunch.

Vegan Chickpea Spread was a bit of an accident when I was in a bit of a hurry to go kayaking with my husband and friends. The weather has been spectacular and hey you gotta go for it when life presents an opportunity for fun, fresh air and friends. A winning combination.

I wanted something hearty that I could transport easily in my pack and kayak. I decided to make the spread and then bring some Wasa Rye Crisps to spread it on, some fruit, a drink and some carrots and you’ve got an instant picnic. What I did not expect, was to like it so much…this little mixture is absolutely delicious, satisfying, mostly healthy and quick to make. I hope you enjoy it as much as we did.

What you will need to make your Vegan Chickpea Spread:

  • 2 c of cooked chickpeas (canned or homemade)

    Organic chickpeas – MAKE YOUR OWN – better and cheaper. I have a very simple recipe on this blog – search chickpeas

    All my ingredients ready to go! Mash up the chickpeas, add the remaining ingredients, taste and adjust. Finish with fresh lemon.
  • 3 T of nut butter, your choice
  • 1 t tumeric mustard (or mustard of your choice)
  • 1-2 T maple syrup
  • 1/4 c red onion, small dice
  • 1/4 c celery, small dice
  • 1/3 c dill pickle, chopped
  • 2 t capers, chopped
  • 1-2 T vegan mayo or cashew cream, optional
  • Lemon juice, freshly squeezed to finish
  • Salt and pepper to taste

How to make your Vegan Chickpea Spread:

  1. Rinse and drain the chickpeas, homemade is awesome too!Vegan Chickpea Spread
  2. Gather and prep all your other ingredients
  3. Add the chickpeas to a large mixing bowl, roughly mash about 2/3rds into mash, save 1/3 slightly broken up to add a bit of texture
  4. Add in all the ingredients except the salt and pepper and fresh lemon. Leave them later when you know what your flavours are like.
  5. Add salt and pepper to taste. Store for up to three days in a cold fridge, serve on crackers, on a lettuce leaf, in a wrap, in a sandwich, straight out of the container. Its that good.
