Pan Seared & Roasted BBQ Mushrooms A Gorgeous Colourful Plantbased Meal

You are gonna love this technique developed by Derek Sarno of WickedHealthyRecipes. He is a master with mushrooms and developed this two pan technique a few years ago. Check out his YouTube Channel and cookbooks.

You could use most mushrooms with this technique for Pan Seared & Roasted BBQ Mushrooms, so far I’ve tried Portobello, and Lion’s Mane cause that’s what I have. It would be wonderful with a huge clump of oyster mushrooms, on my must-try experiences.

Pan Seared & Roasted BBQ Mushroom Recipe

What you will need for your Pan Seared & Roasted Mushrooms 

You will need two pans, they use cast iron, I will use my sauté pan and a Dutch oven for the weighted pan. Plus the following ingredients:

  • 2-3 large mushrooms (like portobello) or mushroom clusters (like oysters). Minimum one large mushroom or cluster per person. They are going to reduce in size so keep that in mind.
  • BBQ sauce, store-bought or homemade, your choice, equivalent to one jar
  • Beer to thin out the BBQ sauce and add a bit more flavour, about ½ cup
  • For seasoning: BBQ blend of seasoning, salt, pepper, and garlic powder (Tip: sprinkle only on the mushroom, not on the pan).
  • Green onion to garnish

How to make your Seared and Roasted BBQ Mushrooms

  1. Heat up a pan till it’s good and hot, and add a bit of oil (optional)
  2. Put mushrooms in the pan (whole) with the base side on the pan to start
  3. Place a large heavy pan on top of the mushrooms and gently press down, allowing a lot of the water to be released and to evaporate.
  4. Season with a bit of each spice (only sprinkle on the mushroom, not the pan)
  5. Very carefully flip the mushroom to the other side.
  6. Add a bit of oil on the sides to be sure it doesn’t burn
  7. Cook down with the heavy pan on top till the other side is golden, season and flip again, the mushroom should be getting a lot smaller now.
  8. Preheat the oven to 400 degrees
  9. Get out a cookie sheet and cover it with parchment paper
  10. Take mushrooms off the pan and put them on the parchment paper, add a bit more BBQ sauce
  11. Cook in the oven for about 20 minutes, slice and serve
  12. Garnish with green onion, serve with veggies and rice or other sides of your choice
