Yum! This is one of the first vegan meals that I made that everyone loved! It’s easy, delicious and full of great ingredients. I usually double the amount of sauce for this recipe and save some sauce for the next day, its that good, you’ll want more! Sometimes I cook the pasta and sauce and don’t combine them till the next day, when I cook the asparagus. That works too for this Pasta Alfredo.

One thing you need to know…when you put the sauce on the pasta, it’s going to thicken up fairly quickly. If it gets too thick for your liking, just add a bit more water. Serve right away.

What you’ll need

A package of pasta, any type will do, I really like the black bean pasta you can get from Costco as the pasta stays fairly firm. I hate mushy pasta! Bonus its gluten free too! You could also serve this on fresh spaghetti squash as a pasta, amazing!

A high speed blender is best as it will make your sauce very creamy and smooth. A pot for cooking pasta and a large fry pan or a wok could work.

Ingredients

Pasta Alfredo

  • One package pasta
  • 1 Tbsp. oil
  • 3-4 cloves of garlic
  • 1 tsp of red pepper flakes – I like things spicy!
  • 1 bunch of fresh asparagus stalks, break off bottom of shoots, chop into 1 ½ inch pieces
  • 1 tsp salt
  • 1 cup raw cashews, soak cashews for minimum of 2 hours and then drain and rinse
  • Zest of 1 lemon
  • ½ tsp ground pepper
  • 1 ½ cups water
  • 2 Tbsp. lemon juice

Method

1. In high speed blender mix the following: cashews that have been soaked and rinsed, lemon zest, ground pepper, water and lemon juice. Blend until smooth and set aside – the mixture will be very thin, that’s ok!Pasta Alfredo

2.Prepare pasta, rinse and set aside.

3. In large fry pan or wok, heat oil and add garlic and red pepper, cook for about a minute.Pasta Alfredo

4. Add in asparagus and salt, cook about 3 to five minutes, till its bright green and still fairly crisp (5 minutes)

5. Now you have all your major components ready. Be sure you are ready to eat and have assembled the remainder of dinner, a side salad is a good choice with this meal.

6. Add your pasta to the asparagus, add your sauce, stir, remember the sauce will thicken up fairly quickly.

 

7. Serve and enjoy!
