Taco’s rock. They are fun to make, everyone gets what they want and most importantly, they are absolutely delicious to eat. You can really put anything in them and use all types of wraps…. soft tacos, hard tacos, corn tacos…whatever you like the best.

I love making mine with walnut meat. Walnut meat adds a delicious flavour and a nice texture to the dish. Check out the recipe for walnut meat below.

Inside you can stuff them with anything you want. Lots of veggies, maybe some rice and cheese! To finish, top with chopped onions, more cheese, cilantro, parsley, more salsa, sour cream and avocado. What a feast!

Sometimes I heat up the shells in the oven and have half my ingredients hot and the rest cold. No two tacos are the same and that’s half the fun.

Plantbased Tacos with Walnut Meat

Potential Ingredients – really there is no list – use what you have and love

  • Walnut meat (Recipe Included) or Veggie round
  • Cooked rice or noodles
  • sprouts
  • Sauteed or raw mushrooms
  • Fresh tomatoes
  • Peppers of all types, raw, pickled, they all work
  • Spinach or lettuce
  • Salsa
  • Green onion
  • Jalapeño
  • Cheese of all types

I love walnuts! Especially raw and organic, the best. Now I only tried walnut meat a few years ago and I was totally blown away by the flavour and texture. Absolutely delicious. Great on tacos, pizza, in a sandwich or burrito.

Walnut Meat

Ingredients you’ll need for the Walnut Meat

  • Four cloves garlic, minced
  • 2/3 c sundried tomatoes (oil-free, if possible, rinse and soak to soften
  • 3 cups of raw organic walnuts
  • ½ teaspoon sea salt
  • 1 Tablespoon smoked paprika
  • 1 Tablespoon cumin
  • I Tablespoon chili powder
  • 1-2 teaspoons nutritional yeast
  • One small habanero pepper, minced (be careful they are hot hot!)

How to make your delicious walnut meat

  1. Prep all your ingredients before compiling your recipe. That way you won’t be running to the store for something you forgot in the middle of putting it all together! 
  2. If sun-dried tomatoes are in oil, rinse them off thoroughly. Place the tomatoes in some warm water to soften. 
  3. Take the organic walnuts and place them in your food processor. Pulse a few times to break up the walnut pieces. hen softened, (a few minutes), t
  4. Blend all in a food processor. 1 tsp coconut sugar or date paste (optional). Done
