Delicious and colourful fresh garden salad!

Today I went to my garden and picked my lunch! It feels wonderful to go out in the yard and pick food that is so fresh and good for you too! I made a beautiful Fresh Garden Salad full of colour and flavour….so easy to do.

From the garden I choose baby carrots, beets, beet tops, kale, Swiss chard and cherry tomatoes. Washed it all up, grated the beets and carrots, and cut everything else into bite size pieces.

Add in more protein, flavour and texture with raw pumpkin seeds, raw sunflower seeds, organic raisins and creamy avocado slices.

Next I added some more protein, texture and flavour by adding raw pumpkin seeds, raw sunflower seeds, organic raisins and one of my all time favourites….creamy smooth avocado slices.

Last thing was to mix it all together and add some home-made salad dressing. For this salad I choose to add balsamic vinegar and some Vegenaise mixed together. Voilà its done!

So simple, so delicious and so good for me and my hubby!
