Can it get any better than Yummy Gluten Free Vegan Black Bean Brownies? Almost too good to be true!
The cool thing is, they are yummy and good for you too. Take it easy on the icing or coconut milk icecream that goes along with these nutritious gems.
My friend Lisa Chell of http://modernveganfamily.com/ first introduced me to this recipe when she had posted them on facebook. The recipe comes from the talented Minimalist Baker http://minimalistbaker.com/ She is a legend with her easy recipes that taste fantastic. I have slightly adjusted the recipe – just because those were the ingredients I had at home. The original is perfect and belongs to the Minimalist Baker. My pictures show you just how easy it is.

Yummy Gluten Free Vegan Black Bean Brownies
What you will need for your Yummy Gluten Free Vegan Black Bean Brownies:
- 1 can black beans (drain and rinse well)
- 2 flax eggs (mix 1 T of ground flax with 3 T of water and let sit, this one egg) For this recipe you will need 2 T of ground flax soaked in 6 T of water)
- 3 T melted coconut oil or if its hot out room temperature
- 3/4 c cacao powder (this is the best coco in my opinion)
- 1/4 t sea salt
- 1 t vanilla extract
- 1/2 -3/4 c coconut sugar or brown sugar
- 1 1/2 t baking powder
Toppings you might like: Shredded coconut, pecans, chocolate chips. Icing is optional.
How to make your Yummy Gluten Free Vegan Black Bean Brownie:
- Preheat oven to 350
- Grease your pans, either use mini muffins or regular muffin tins. I rubbed a little coconut oil on my pans
- Make your flax egg, two large eggs per recipe (each flax egg is one T of ground flax mixed with 3 T of water, let sit)
- Rinse and drain your black beans and put into your food processor, pulse till blended
- Add in the remaining ingredients including your flax eggs, coconut oil, cocao, salt, vanilla extract, brown sugar and baking powder. Pulse on high to mixed well. If too thick add a bit more water.
- Spoon into pans and place in your preheated oven

rinkle on extra toppings like chopped nuts or chocolate chips
- Cook for 20-25 minutes, should be a bit moist in the middle, do not overcook
- Remove from oven, cool in pans and when cool remove, ice if desired.
Have a couple quick; they won’t last long!
