Many times in my travels, I am asked what do you eat? My response is…I eat just what you eat, only I swap out a few ingredients and in my opinion…it is usually healthier! The key reason why it is healthier is that I do not include any animal fat in any of my dishes, less opportunity to block up those arteries! If possible I also try to use organic and fresh produce as much as possible. That helps too! Here is what happens at Vegan Thanksgiving.
So what do vegan’s eat for Thanksgiving? Well in our house we are pretty traditional. We have many of the same dishes that I and my husband grew up with; the biggest difference is we have a Tofurky instead of a turkey.
Good friends of mine, who are also vegan, shared with me that Gardein makes an awesome Holiday Roast; I want to try that at Christmas….none to be found in town for Thanksgiving. I will pre-order one from our local grocery store next time. They look really good!
Do I miss turkey? Not at all! I really don’t want to eat any animals, including turkeys. Tofurky is pretty good if you know how to cook it.
So here’s what we had for Vegan Thanksgiving…..
What we had for our Vegan Thanksgiving Feast!
Tofurky cooked in the oven. The key to good tofurky is to cook it in the oven with veggies. Also to create a sauce (recipe on the box) and to apply the sauce on the Tofurky roll. In my roaster, I add in onions, carrots and potatoes, and I baste it with the sauce made of oil, soy sauce and sage.
I prep all my veggies, get my roast in the oven and then cook the other vegetables as you normally would. We had….
Brussel sprouts with olive oil, maple syrup, salt and pepper and then roasted in the oven
Garden fresh beets, baked with a bit of olive oil salt and pepper
Sweet potatoes, baked in the oven. I am making some double baked sweet potatoes today with the leftover sweet potatoes…another post!
Cranberries – made with organic cranberries (recipe on the bag) and I added some fresh mint and lemon zest for flavour. So easy to make.
Potatoes boiled…my son loves boiled potatoes, so made extra for him.
Carrots and turnips, boiled and mashed. My husband’s favourite.
Dressing – Made from a box…not too creative I must say. Does taste good. Be sure to get one that is vegan friendly.
Salad – made with the usual fresh ingredients…spinach, kale, grated carrots and beets, peppers, onion, mushrooms, tomatoes, avocado, raw seeds and nuts
Home-made vegan salad dressing (easy to make, mix up Vegenaise with Balsamic Vinegar)
Fresh baked buns…bought the whole-wheat type that you finish off in the oven.
Gravy – made with vegetable water, Better than Bouillon and Bistro Gravy Mix. I like to make lots of gravy to have extra for the next day, when I make hot Tofurky sandwiches smothered in gravy!
