Crisp Quesadilla filled with fresh veggies, jalapeño peppers and vegan friendly cheese. Accompanied by avocado, salsa and vegan friendly sour cream. Dig in!

Quesadillas – super easy to make a vegan version of these babies!! Use whatever veggies you like, you can experiment each time you make them, and if you have company they can make their own version too. Every time I make my Vegan Quesadillas, they are a bit different. Today was a pretty good version that I will share with you. Feel free to omit ingredients and to add in some of your favourite veggies – let’s get creative!

Vegan Quesadillas

What you’ll need….my version, this time!

  • 2 burrito shells per quesadilla. This time I used a garden vegetable wrap
  • Veggies – I used asparagus, spinach, onion and tomatoes
  • Jalapeño peppers fresh or from a jar (I also like black olives, chilli peppers, artichoke hearts, any type of peppers)
  • Vegan friendly cheese (I used Daiya shreds)
  • Vegenaise
  • Vegan Cream cheese (I used Tofutti)

  • Salsa
  • Avocado
  • Vegan Sour Cream (I used Tofutti)

How to prepare:

  1. Preheat oven to 400° or you can cook on the stove-top in a large fry pan
  2. Take one burrito shell and spread a little cream cheese on the shell, on the other shell spread a thin coating of Vegenaise…it will help everything stick together.
  3. Place one shell on your oven cookie tray or fry pan
  4. Start to build your ingredients layer by layer…sliced onions, asparagus, spinach, jalapeño sliced up, tomatoes and finish off with

    Last layer, generous sprinkling of vegan friendly shredded cheese. Next goes the other shell to top off your work of art!

    Place the other shell on top of the one filled with veggies and cheese and press together, make sure all the ingredients are basically in between the two shells, they will shrink down when you cook them

  6. Place your tray in the oven or the pan on the stove (medium heat) and cook for about 15 minutes, until the top is turning brown…not too dark
  7. Remove from the oven or stove top and flip the burrito….carefully, I usually use two flippers and quickly turn it over. Stick all the ingredients that fell out during the flip back in!!
  8. Return your tray to the oven or fry pan to the cook stove and cook for another 10 minutes, until the other side is brown too!

    You can almost smell it from here? Your finished quesadilla cut into pieces and ready for the plate.

    Remove from oven or stove top

  10. On a large plate, cut up your avocado into slices, get some of your salsa in a small bowl and put a couple of tablespoons of vegan sour cream in another small bowl
  11. Cut your quesadilla into pie shape pieces, transfer to your plate

    Garnish with vegan friendly sour cream (Tofutti), avocado slices and salsa. Enjoy this Mexican inspired treat!

    Put a little avocado, a little salsa and a little sour cream on a piece of quesadilla and bite in!! Kind of messy and fun too!!
