Raw Turtles Vegan Style
Turtles? Did anyone mention Raw Turtles Vegan Style?
Last holiday season I made these wonderful yummy best ever want more raw turtles – vegan style. Super easy to make and I had to hide them under lock and key to keep them around for more than five minutes. That’s how good they are!

Turtles Raw Vegan Style
These little turtles are so yummy! I made up a batch and then froze them in an airtight freezer container. That way when I was putting together a plate of goodies, I could add a few of these too! Quite frankly, I could probably eat them all in one sitting, so best to be out of sight!
What you will need to create your Turtles Raw Vegan Style
For the chocolate base and topping you will need:
- 1 cup semi-sweet chocolate chips (vegan)
- 1 1/2 tbsp. virgin coconut oil
- 5.5 oz. raw pecan halves (about 96 pieces – 4 used per ‘turtle’)
For the gooey caramel centre you will need:
- 6 Medjool Dates, soaked for 3-5 minutes, seeds removed
- 4 T warm water (as needed to blend)
- 2 T coconut oil
- 1 t maple syrup
- ½ t vanilla extract
How to make your Turtles Raw Vegan Style
- Cover a cookie sheet with parchment paper and put it in the freezer to get cold
- Soak the Medjool dates in warm water for 5 minutes and remove the pits.
- Place the dates into the food processor with the coconut oil, maple syrup and vanilla and blend till smooth, this is your caramel filling
- Add a little water to get a nice caramel consistency.
- When the caramel is smooth; place in the freezer to firm up a bit.
- In a double boiler, melt your chocolate and coconut oil, whisk till its smooth as smooth can be
- Place this in the fridge to thicken a bit for pouring.
- Take two – three pecans and place them on the parchment paper in little cross shapes. Repeat till all the pecans are in separate cross shapes in the pan
- Remove your baking sheet from the freezer along with the caramel and chocolate.
- Drizzle chocolate to form a “body” of the turtle, the chocolate attaches the pieces of pecan together
- Once your turtles have all been assembled and drizzled with a chocolate base, place in the freezer for 5-10 minutes to harden.
- Remove from freezer – the chocolate should appear more solid. Spoon a tablespoon of caramel on each turtle. Then top with chocolate sauce to cover the caramel center.
- When finished, place the turtles back in the freezer for 5-15 minutes to fully harden and become ready to enjoy!
- I put my extras in the freezer in an airtight container to put out when I need some. The chocolate will melt in your fingers, so delicious!
