Spicy Tofu Ramen
I love Ramen! Do you love ramen? This is my first time making a ramen noodle bowl and it will certainly not be my last! If you haven’t heard of my beautiful Thai friend Mook, you gotta check her out on IG @mymeatlessmeals! She creates wonderful recipes and videos on her IG account and she was the one that inspired me to make this dish! Thanks Mook….love you and your work.
Mook posted four types of Ramen, a slight variation of ingredients, pretty similar process. I choose to make a spicy version and modified the ingredients to what I actually had in my fridge. For example I used Tahini as I was out of Peanut Butter. I sauteed my tofu and mushrooms before putting them in, little things like that.
That is the cool thing about cooking. Its about creating something delicious with the food you have in your life and in this case, my fridge. There are techniques and foods and spices that taste better together…..other than that there really are no rules. Get in and have some fun making your own unique ramen bowl.

Spicy Tofu Ramen is pretty straight forward. You are going to make a broth and in the basic broth you are going to add more flavour. This is part of the reason each recipe is unique. Next you will prepare your ingredients for the bowl and last step is to assemble and eat. That’s the best part!
I like to get everything ready before I start to assemble, that way I know I won’t have any surprises at the last minute. I prepped all my veggies, tofu and then at the last few minutes, popped them back in the oven to heat up before I created my bowl. I like my hot stuff hot!
Here is what you will need to make your Spicy Ramen Soup

Ingredients for the base broth – you will have extra broth or reduce the amounts
- 1/2 -1 sheet nori
- 1/2 t bouillon
- 1T miso
- 2 cloves garlic
- 1 medium leek
- 10-12 cups water

How to make the broth for your Spicy Tofu Ramen
- Bring to a boil
- Simmer for 30 minutes
- Strain and set aside. You will have enough for 3-5 bowls

What you will need for the paste that makes the broth extra delicious
- 3-4 T tahini
- 3-4 T Bragg Soy Seasoning
- 4-6 T Sriracha Sauce
- 1 T maple syrup
- 1/2-1 c coconut milk
Ingredients ready to go
Blend all of the ingredients and the paste to your broth (start with two cups of broth per bowl and then 1/4 of the paste on average. Stir well, and taste. Add more broth or paste to your preference.
Examples of ingredients you can add to your ramen bowl. Use your imagination and what is in your fridge!
- Carrot sticks, blanched
- Corn (I used canned)
- Sauted mushrooms
- Sautee with a bit of char asparagus
- Blanched or raw bean sprouts
- Ramen noodles – I bought fresh and boiled and then rinsed
- Green onion, chopped, to finish
- Toasted Sesame Seeds, to finish
Next you will add your prepared and warmed up veggies and tofu. Final taste. You can bump up the flavours or add more of any of the above to suit your style. I added more hot sauce as I love things super spicy! Top with onions, sesame seeds, etc. Dig in and enjoy!

How to Create Your Spicy Tofu Ramen Bowl
- Create the broth
- Prep all the ingredients and place in bowls, keep the hot stuff warm till ready to assemble and the cold stuff cold
- Add in your spicy paste to your hot broth (the tahini mixture)
- Add some noodles in the bottom of the bowl
- Layer on your veggies and marinated tofu
- Pour over 2-3 cups of hot broth per bowl
- Add your cold ingredients to garnish – green onion and toasted sesame seeds. You could add on some nuts, chili peppers…..
Dig in!
Enjoy your creation. You probably have leftover ingredients and broth, make another bowl and try something else in it. Have fun!
