Rouxbe Online Culinary School. What can I say about Rouxbe? Let’s just start off by saying that taking the Plantbased Professional Certification through Rouxbe is probably the most fun I’ve had in a long time. And my life is pretty good! So that’s saying a lot.

I grew up in a family of ten, seven of them of the male gender and let’s just say we cooked a lot of food for a lot of people at our house. I can cook; I just never learned “how” to cook.
Almost all of my favourite shows are cooking shows or home renovations shows. For the cooking shows, I always imagine myself working against the clock, cooking up something fabulous. My only concern was I didn’t know what they were really talking about….when they mentioned balance and its too acidic and I’m going to make a Pomodoro sauce….I really was not clear what they they talking about. I wanted to know more. I wanted to learn more about the basics of cooking and most importantly to me, the basics of plant based cooking.

I’ve been a vegan going on 10 years and have been cooking vegan for about 5 more than that and vegetarian about 5 more again. I stumbled upon Rouxbe, when I found a few vegan focused Instragram accounts that mentioned certification from Rouxbe. I thought that was cool and I also thought they were doing some pretty cool things with food.
The first IG account I connected with about the program was Rouxbe grad Thomas @vegan_tk, a super cool dad and vegan. I connected with Thomas and asked him for his honest opinion of Rouxbe and the Plantbased Pro Culinary Program. I told him I was considering taking it and it was quite an investment in time and money. Thomas highly recommended his experience with Rouxbe and I trusted what he said.
Once I make up my mind about what type of experience or learning I want to take, I just go for it. I signed up on the payment plan…..a great option and decided the best time to start in terms of my life and my work was in the spring and well the rest is history. I jumped into the learning and enjoyed every minute of the experience and journey with Rouxbe.

This is an honest review of my experience with Rouxbe. If you asked me if I would do it again? I would say yes, totally, for sure, you bet, unquestionably, uh huh !!!! Now that’s a solid yes!
Now was it all perfect, pretty close, did I have challenges, a few for sure. Was it worth it, absolutely!
In fact, I intend to go over all the modules, videos and practice recipes one more time, when my life slows down a bit. (More about the resources later). I learned sooooo much more than I thought I would, the learning fueled my passion for creating and sharing plant based foods to support the vegan movement. Good food always wins!

1. Basics to Gourmet

2.The Learning Platform
For the past 25 plus years, I have worked as a trainer and facilitator working with adults in all types of learning environments. Face to face, virtual, online, SKYPE, webinars….many different experiences as a learner and with those that are learning.
I love the Rouxbe platform, it is as close as it gets to being there in person. The learning platform is very interactive (which most adults love), stories, video, quizzes, module tests, practice activities and recipes, real life assignments – cooking, taking pictures, explaining your experience and learning, getting feedback from professional chefs like Chad Sarno.
BTW, Chad, the key team member in the plantbased program is also the co author of the coolest new vegan cookbook, The Wicked Healthy Cookbook. That’s the type of people who are involved in your learning! Top notch experienced chefs that know their stuff.

Speaking of the instructional feedback. I know the instructional team must see many many submissions from our assignments, and yet their feedback is always specific and in support of your individual learning experience. The staff are very genuine and qualified.
Ongoing access to the materials is fabulous! You can go back and review anything at any time. My plan is to totally redo the modules – I know I can only remember a fraction of what I learned and there were so many more practice recipes I want to try – that is where the real learning happens!
3. The Recipes and Learn as you Do Approach
The recipes for assignments and for practice are fantastic. You also have access to a whole online searchable database of Rouxbe recipes. Every time I make a Rouxbe recipe, I learn more. I love it.
For every module you will have a pre-assessment, an overview, learning components, practice components, videos, activities just for fun…..all to help you learn and experience cooking like a chef.
The curriculum is supplemented by many outside resources such as links to interesting websites where you could learn more, if you want. They bring in excellent guest speakers that share their knowledge with the group and you can send in questions via the chat line, pretty relevant, informative and real. There were also cohort online chats where Chad or Ken would talk about different aspects of chef life from running your own business to ways of getting experience with your new skills. All excellent opportunities to learn more, your choice to attend or not. These extra learnings do not impact your overall mark.
4. The Rigor, Tests, Assignments, Feedback and Overall Support
I’ve taken many programs including my Masters of Leadership and Training at Royal Roads University (another wonderful learning institution). With Rouxbe and the Plantbased Professional Certification, I felt that I earned my certificate. This is a real program, with deadlines, assignments, feedback and marks. At the end of each module you write a test and that is part of your overall mark. At the end you have a final and a couple big assignments to complete the program.
As I was traveling a lot for work, and I had to put in about 15 hours a week just to keep up to the suggested schedule (you totally work at your own pace). In the end, I asked for two – one month extensions (one free, one I paid for) and in the final stretch, they gave me a few extra days for free, to finish off my final assignment. Doable and fair.
Rouxbe was fantastic and always responded to my email requests within a very short period of time, mostly the same day. You can also sign up for their Facebook page (for learners only) and you can ask questions, share information there too.
5. Access Forever
This is so awesome! For a very small monthly fee, I can have access to the materials, the videos, the recipes, everything…. I pop into the course material all the time. Sometimes I want to refresh my memory about a concept, sometimes I want to revisit a technique or I’m looking for some inspiration from the multitude of beautiful recipes in the database. This is really of value to me, a trusted resource. Its wonderful.
My 3 Challenges
1. Someone Looking over my Shoulder – Sometimes!
Now if I was to be honest, once in awhile I would have loved to have someone look over my shoulder (other than my husband) and say “try this or this would work better…….” Just once in awhile…..
Rouxbe, what about face to face retreat – Rouxbe grads cooking with grads and the chefs, learning some advanced and cool techniques! Working and learning in a kitchen together. What do you say?
2. The Dishes – Literally the actual Dishes and Washing them!
This was more of a challenge for my husband than me, as I was busy cooking and well he did most of the dishes! Sorry hon!
For each assignment you need to create your Mis en Place (all ingredients prepped and in separate dishes). For some of the more complex dishes, there were several components that each had their own Mis en Place. Therefore a lot of dishes and equipment were used and I might be a little messy too!
Personally, I think my husband should just be happy getting to eat such wonderful food. Truthfully, I thank him from the bottom of my heart for all his support, feedback and encouragement. He is a keeper for sure.
3. Fitting it all in to an already busy life!
As I mentioned, I travel quite a bit for my work, doing the actual cooking (practice recipes and assignments) was a bit of a challenge. There are some things you just cannot do in a hotel room! On most weekends, I cooked all day. Fun, just a little hectic. This will be unique for every individual. It is work, so think beforehand what supports if any you may need.
Like many of you I have my career, my family, my cooking, my garden, my fun, my blog, my IG account and it all keeps me pretty busy. And at the same time, I wanted to take this course soooo much.
So I did, I committed, yes I got two extensions, yes I would have loved to have more time, all of that. And I would do it all over again! So much fun, so much learning, so much good vegan food!
