Wow this is an awesome salad and so easy to make. You’ll need a spiralizer to make the zucchini noodles…its a good investment and they are pretty reasonably priced too. This Raw Zucchini Pasta Salad is full of protein, flavour and looks spectacular, you can really impress your guests for that summer dinner with friends.
Raw Zucchini Pasta Salad
What you’ll need for the salad fixings :
A spiralizer – you can purchase from a cooking store, health food store or on-line. This is the one I have, its pretty good. I am going to buy another one though. One that will make the noodles a bit bigger.
- Zucchini – for this recipe you can use 3-4 medium sized zucchini’s
- 1/2 sliced red onion
- 1/2 c cilantro
Method for salad fixings:
- Spiralize your zucchini, you can make it into spaghetti shape or ribbons – your preference, the zucchini has a lot of moisture in it, so leave it sit for awhile and drain off any excess moisture
- Chop onions and cilantro and add to the zucchini
What you need for the dressing:
- 1 c raw cashew, soaked for 2 hours
- Juice of 4 limes, make sure you use lots of lime, it adds the kick to the dressing
- Zest of one lime
- 1/2 c coconut water. If you wanted a richer dressing you could add 1/2 c of coconut milk
- sea salt and pepper to taste
Method for the dressing:

Put your soaked and drained raw cashews in the blender (high speed is best, regular will do)
- Add in lime juice and coconut water or milk
- Blend till creamy smooth
- Add in lime zest, salt and pepper to taste.
Just before serving:

Drain your zucchini, one more time to get any excess water out
- At this point, I added in some cherry tomatoes and sweet pansy flower tops for colour (optional)
- Pour your dressing over the salad fixings, toss gently and serve.
