Raw Caramelized Onions
One thing that I have found is its great to have a few extra toppings or garnishes ready in my fridge or freezer, for when I really want to elevate a dish. Here I have added my raw caramelized onions to the raw vegan lasagna and it added a wonderful taste and texture element to the dish.
Make a batch in the summer and put it out when you have a picnic or BBQ – let people add it on to their own unique creations. It will be a big hit.
What you’ll need to make your Raw Caramelized Onions:
Gather up a few simple ingredients and you are almost done!
- 2 sweet white onions or red onions, your choice. I like the white because I
think the end result is more aesthetically pleasing than the red, personal choice.
- 3 T olive oil
- 3 T tamari or Bragg Soy Seasoning
- 1 clove garlic, minced
- 3 T date paste (take some Medjool dates, soak them till soft, drain and blend to make a paste, you may need to add in a bit of water to blend – this is a wholefood sweetener)
How to make your Raw Caramelized Onions:
- Slice the onions super thin, the best way is to use a mandolin (carefully)
- Mix all the other ingredients together and stir well (oil, tamari, date paste, garlic)
- Pour the mixture on the onions and toss to fully coat, use your hands to massage the sauce into the onions for a couple minutes
- Leave on the counter, room temperature, for an hour or so, allow the onions to soften
- Put in a air tight container and store in the fridge for about 2 weeks.
Put them on top of everything to add a bit of zing and zest. Delicious!
