Quick Pickled Red Onions are the next best thing to inventing bread. They are that good and everyone should have some in their fridge all the time – IMHO! When I say quick, I mean quick. When I say easy, I mean easy. When I say versatile, you got it, I mean versatile.
That’s why this post is mostly pictures and very little on recipes. The most difficult part, if any, is cutting the onions super thin and if you have a mandolin – that part is easy too!

For ingredients – you need four – onions, red wine vinegar, sweetener, and a pinch of salt. So, oil-free, gluten-free, dairy-free too. Not flavour free. These onions literally elevate so many simple dishes by adding that sweet and tangy note. That note brings out and enhances all the other flavours of the dish. Get creative…..let’s go!

What you will need to make the Quick Pickled Red Onion Recipe

  • 1 red onion, sliced thin (use a mandolin or a sharp knife, either way, be careful)
  • ½ cup red wine vinegar – feel free to experiment with other kinds of vinegar
  • 3 tablespoons of liquid sweetener – agave, syrup, mirin
  • Pinch of salt

How to make your Quick Pickled Red Onions

  1. Slice your onions thin and separate the rings
  2. Mix together the vinegar, sweetener and salt till dissolved
  3. Add onions to the mixture
  4. Cover the onions with liquid and let sit for at least one hour
  5. Store in an airtight container, last for at least a week in the fridge
