Do you like pizza? How about puff pastry? Then you are gonna love Puff Pastry Pizza!
I love this recipe, it’s such a simple way to make a crust and the yummy pizza will be ready in about 20 minutes!
Yes, there are a few brands of puff pastry that are vegan. I can buy one at my local grocery store in the freezer section. Or alternatively, you could make your own. I choose to buy mine.
Here are a couple of tips before you get started.
- Leave the puff pastry in the fridge until you are ready to put it all together.
- Prep all your ingredients first.
- Be sure to preheat the oven to 400, always start with a hot oven. You want the fat in the pastry to melt quickly, for best results and to help give it that flakey texture.
What you will need for your Puff Pastry Pizza
- 1 package puff pastry – keep cold until ready to use. Can be refrozen
- ¼-1/2 cup of pizza sauce, a red sauce, a white sauce or hummus works too.
- 1 package dairy-free cheese shreds
- 4-6 slices of vegan ham. Cut into small squares
- ½ onion, sliced in rings and sauteed, set aside to cool
- 10 -20 mushrooms of your choice, sliced and sauteed, deglaze with wine or balsamic vinegar, set aside to cool
- 1-2 cups of fresh or cooked veggies of your choice (peppers, broccoli, cauliflower, beans, asparagus). If they take a long time to cook best to partially cook before putting on pizza. Remember to cool them down first.
- A handful of fresh spinach, rough chop
- 10 fresh baby tomatoes, sliced
- Salt and pepper, a pinch of each
- Chilli flakes – optional, sprinkle to suit taste
How to make your Puff Pastry Pizza
- Remember to have your puff pastry thawed and still cold in the fridge, oven heated, and all your ingredients prepped and cooled. Now you are ready to assemble.
- Place a piece of parchment paper on a cookie sheet
- Take the puff pastry, carefully unroll the pastry, at the halfway mark, cut the pastry with a sharp knife, cut straight down. Put ½ of the pasty roll on your cookie sheet…. keep the remainder rolled and in the fridge for the top of the pizza
- Work quickly.
- Start with a layer of your favourite pizza sauce. Leave the edges clean
- Add a sprinkle of your shredded cheese of your choice
- Add toppings, onion, mushrooms, spinach, tomatoes, and all your veggies….add a bit more cheese partway between adding all the veggies and toppings
- Sprinkle with chilli flakes (optional if you like heat)
- Add a bit of salt and pepper if desired
- Add a final layer of cheese
- Place the other half of the remaining puff pastry on top of the first sheet, matching the edges carefully
- Press the edges together gently with a fork to close the edges of your giant pizza pocket. Do not overhandle the dough or fold it. It may become tough when cooking.
- Slice a couple of openings in the top of the pizza pocket and place the tray in the hot preheated oven for about 20 minutes. Time may vary…. basically, wait till the crust is golden brown and hopefully you got some good rise in the puff department too!
Slice when it’s cooked and serve with a side salad and dipping sauce (ranch dressing is awesome)! Freeze and leftovers or have it for breakfast the next day.
This is a basic recipe. You can go crazy and add lots of different toppings…all the things you love and make it your own. Have fun whatever you do!
