Everyone loves bacon! And who wants to hurt a cute little pig to have some? I don’t!!! This recipe for Portobello Mushroom Bacon makes it possible. I found this amazing recipe for bacon made with Portobello Mushrooms, modified it slightly, as usual, and am so happy to share it with you!
Its such an easy recipe to make and the taste is wonderful. It has that smoky sweet flavour that we love in bacon. I made one batch, ate most of it before my husband got home…oops I forgot to share. So I’m making a second batch right now. Its that easy!!!
Here is how you can make your own Vegan Portobello Mushroom Bacon…..
Portobello Mushroom Bacon
What you’ll need:
-
1 T coconut oil
- Four large Portobello mushroom – washed and patted dry
- 1/3 c maple syrup
- 6 T liquid smoke
- 1 t salt
- Pepper to taste
Method to make:
- In a bowl combine the liquid smoke, maple syrup, salt, and pepper.
- Cut the mushroom into thin strips, about a ¼ of an inch thick
-
Place mushroom strips in the marinate and soak for about 45 minutes, turn often to be sure all the pieces are getting covered
- Heat the coconut oil in a fry pan
- Drain the strips of liquid and place in the fairly hot fry pan.
- Cook the mushrooms for 3 – 5 minutes, flip and cook for 3 -5 more minutes. They will dry out, get caramelized and well cooked.
- Eat in whatever way you want.
I made myself a Vegan BLT – toasted my favourite bread, spread Vegenaise on both slices. Topped with lettuce and juicy tomatoes and lots of Portobello Mushroom Bacon. It was so good. Thinking of making another one soon!!
