Nut Free Vegan Mac and Cheese. Always a winner and a key comfort food for vegans and non vegans alike.
One of the wonderful things about being part of social media is the sense of community you can create with like minded individuals around the world. People you would probably not meet or may ever meet and yet you share something very powerful in common. For me, my main community is on Instagram (@veganonthego) and Facebook (veganonthego) and we share a love of plant-based food. That is mainly what we share and there is a lot of diversity in that community too. There is the raw vegan community, the new vegan community, the professional food creator and food stylist people, moms and dads, everyone.
Some people join the vegan community for support, some to learn, some to be inspired and get ideas, some to share, some to promote health, some to promote the environment, some to be the voice for animals – all beings, some to educate, some to raise awareness and critical thinking, some to disrupt the regular. So much diversity and yet a thread that holds us together, vegan, plant-based, wholefoods lifestyle.
That’s where I met Mook. Online, on Instagram. We were both get started with our feeds and our paths crossed. We have supported each other since that time. I love that its cooked in one pot and you can add you own finishing to personalize your dish. The other thing that I love is it’s nut free. Not everyone can eat nuts so its nice to have some nut free recipes that are also tasty and vegan.
Ok let’s make some mac and cheese!
Nut Free Vegan Mac and Cheese
Nut Free Vegan Mac and Cheese is another way to make one of everyone’s all time favourite comfort foods. Vegans like mac and cheese too! That’s why there are so many recipes out there for dairy-free mac and cheese. This recipe is extra cool, as it nut free too! I love that. If you used gluten free pasta, you could make it gluten free too as well as cruelty free. Yes life is good.
As mentioned, you are going to make this in one pot. Yes you heard me right, how great is that?
I get all my ingredients together, measured and in containers ready to go. My Mis en Place. Then when I go to execute the dish, I have everything ready, in order and at my fingertips. Making for a very slick operation – the TV cooks know what they are doing!
Here is what you will need for your Nut Free Vegan Mac and Cheese:
- 3 c unsweetened non dairy, nut free milk (soy, oat, hemp) your choice
- 1/2 t turmeric powder
- 1 t Himalayan salt
- 1 t miso paste (white, light)
- 1 T vegan margarine
- 1 package uncooked dry pasta of your choice (250 g)
- 1/2 c nutritional yeast
- 2/3 c coconut milk
- 2 T tapioca starch or arrowroot starch or corn starch
- 1-2 T fresh lemon juice, I like lots of lemon
- Hot sauce to finish, optional
- Green onion to finish, optional
- Cilantro to finish, optional
How to make your Nut Free Vegan Mac and Cheese:
- Get all of your ingredients out, prepped, measured and set out in individual containers, your Mis en Place. Now you are ready to cook. If you are having any sides, get them ready before you start this, you will want to serve it hot and right away for the best product.
- Mix together the non dairy milk, tumeric, salt, miso paste and vegan margarine in your large pot. Heat to a boil. Stir well.
- Add in the dry pasta and mix pasta into the liquid mixture, lower heat to a gentle boil. Stir regularly, you may need to add a bit more liquid to be sure the pasta is well cooked. Do not overcook.
- Once pasta is cooked al dente, add in the nutritional yeast, coconut milk (mixed with the tapioca starch). Stir to mix well. The sauce will start to thicken. You many need to add more coconut or non dairy milk.
- Plate and finish with a splash of hot sauce, some chopped green onions and or cilantro. All optional.
