Nut Bars using Almond Milk Pulp….so yummy and simple to make! The good news is you are using up the pulp from your almond milk!!!

Do you crave a healthy snack? Do you like to send healthy snacks with your kids when they go to school or when they have their friends over? Do you like to cook with your kids?

If you answered yes to any of the above, you are going to love this recipe.

The really cool thing is you can follow my recipe as is or you can improvise with the extra ingredients (nuts and seeds), you can add a bit more or less sweetener. I found they were perfectly sweet for our family….you can leave the sweetener out all together.

Ok, let’s get down to business, how do you make these Nut Bars? ……

All right before you begin you will need nut milk pulp…so you gotta make the milk first or if you have some frozen from the last time, that would work too!

Here is what you’ll need to make your Nut Bars

  • 2 c Nut milk pulp (I used almonds, you could use another type of nuts or a combo)  recipte for Raw Almond milk here http://www.veganonthego.net/raw-almond-milk/
  • 1/4 c raw sunflower seeds

    All my seeds ready to go…organic raisins, sunflower seeds, pumpkin seeds, chia and hemp hearts. Yum!
  • 1/4 c raw pumpkin seeds
  • 1/2 c organic raisins
  • 1/4 c hemp hearts
  • 1/4 c chia seeds
  • 1/4 t cinnamon
  • 1/4 t nutmeg
  • 2 T Maple Syrup for the mixture (or other sweeteners you prefer)
  • Pinch of salt
  • 2 T Maple Syrup to drizzle over the bars when they are about 1/2 way baked (optional)

How to make your Nut Bars

  1. Pre-heat the oven to 300° or you cook cook them in your dehydrator if you have one
  2. Get as much of the moisture out of the nut pulp as you can
  3. Mix all of the ingredients together except for the last bit of Maple Syrup

    Mixing up the ingredients with the almond milk pulp. Be creative!
  4. Place parchment paper on a cookie sheet
  5. Spread the mixture evenly over the cookie sheet and clean up the edges so they are not too thin
  6. Indent the mixture…so it will be easier to break apart after cooking
  7. Place cookie sheet in the pre heated oven and cook for about 30 minutes to one hour…it really depends on how hot your oven cooks and the thickness of the mixture in the pan

    All ready to go! Wait till they are golden brown before taking them out of the oven. Once cooled a bit, cut them using the indentations you put in the mixture prior to putting them in the oven.
  8. About 15 minutes before they are done, drizzle your last bit of Maple Syrup over the top of the nut bars and put back in the oven
  9. Cook till golden brown, you want them to dry out quite a bit and be a bit crispy.
  10. Remove from oven, cool for 5 minutes and then cut using the indents you made before cooking.
  11. Store in an air tight container if there is any left!
