Got Kale? Got a lot of kale? Not sure what to do with it all? Make Kale Cubes!
I was kind of in the same boat. I’ve made a lot of kale chips, we use it every day in our smoothies, sauces and salads and I still have a lot!!!
Being someone, who doesn’t like to waste stuff – my mom taught me that, I wanted to find a good way to keep my kale for later in the year. I did a little bit of research and came across this amazing idea to make Kale Cubes.
What are Kale Cubes you say? Well they are really frozen kale (and a couple other ingredients) made into a liquid form and frozen in ice-cube trays.
Such an easy recipe…..
Kale Cubes
All you’ll need is:
- Kale
- Coconut water
- Lemon juice
- A blender (high speed best, regular should do the trick)
- Ice cube trays
The method:
- Pick and wash your kale – I had a big bowl of it, about the equivalent of two big bunches from the store
- Take off the spines and squish it all into your high speed blender (I think a regular blender would work too)
- Add in some coconut water – I used one half of a quart for a full blender of kale
- Add in 1-2 t of lemon juice
- Blend until a liquid form, I used my tamper from my blender to squish the kale into the coconut water and the blender blades.
- Once in a liquid form, pour into your cube trays and freeze
- When frozen, remove from trays and place cubes into an air tight container to use as needed.
We will use the cubes well into the winter for smoothies, sauces, soups, anywhere you would love the nutrients and flavour of kale.
