Indian Sweet Potato, Cauliflower, Spinach Curry Stew is amazing!
I find as the weather gets a bit cooler every day, I am craving comfort food, something substantive that makes you feel all warm and cosy inside.

Indian Sweet Potato, Cauliflower, Spinach Curry Stew
What you’ll need:
- 1 large sweet potato (chopped into bite sized pieces)
- 2 cups of carrots (chopped into bite sized pieces)
- 1 cauliflower, (break into flowerettes)
- 1 red bell pepper (seeded and sliced)
- 1 thump-sized piece of ginger (minced)
- 1 T Indian curry paste
- 2 T olive oil
- 2 cans of coconut milk
- 1 t ground coriander
- 1 t ground ginger
- 1 large can white kidney beans or any beans you love
- 4 T Bragg Soy Seasoning
- 1 bag of fresh spinach
- 1 handful of fresh cilantro (always optional)
- 2 T peanut or almond butter
How to make your Indian Sweet Potato, Cauliflower, Spinach Curry Stew
- Peel and chop the sweet potato and carrots.
- Slice the red bell pepper, remove the seeds and chop into bite-sized pieces.
- Mince the unpeeled ginger.
- Heat up the olive oil in a large saucepan or wok. (I used a big wok)
- Once the oil is hot, add the ginger and curry paste and sauté for about one minute.
- Add the carrots, red bell pepper and cauliflower and sauté everything for another 10 minutes.

Add the sweet potatoes, coconut milk, Bragg Soy Seasoning, nut butter and spices

Simmer on medium heat for about 40 minutes until the veggies are getting tender
- Once the sweet potatoes are fork tender, reduce the heat to low, and add the beans and washed spinach. Cook another five minutes.
- Taste and add a little more spice or soy seasoning to your liking
- Add a bit of chopped cilantro (optional) to each bowl as you serve
- Serve with a salad and wild rice and you’ll have a winning combination.
