Gluten-free Flax Pancakes
I haven’t had pancakes for ages and really felt like making some and chowing down. A few months ago I had a store bought mixture that had ground flax seed and loved them. So as usual, I decided to create my own Vegan Gluten-free Flax Pancakes.
Wow they turned out fantastic!
They only took a few minutes, tested by both my son and daughter who both loved them….that doesn’t happen very often. Got up this morning thinking I would have leftovers and found they were all gone! Hey who finished them off! Will have to make more!

Gluten-free Flax Pancakes
What you’ll need
- 1 c gluten free flour
- 2 – 4 T ground flax (I ground up 2 T of flax seed in my coffee grinder)
- 1 T baking powder
- ¼ teaspoon salt
- 1 1/2 to 2 c almond milk or dairy-free milk
- 2 T melted coconut oil
- 2 T sugar of choice (I used coconut sugar)
- 1 t vanilla extract
- Oil for your pan, so the pancakes don’t stick
How to make your Gluten-free Flax Pancakes:

If you have flax seed, you can grind them up in your coffee grinder or use already ground flax.
- In a mixing bowl, whisk together the flour, ground flax, baking powder and salt.
- In another bowl, whisk together the milk, oil, sugar and vanilla extract until thoroughly blended.
- Pour the liquid mixture into the dry mixture.
- Stir until combined, so only a few lumps remain (don’t over-mix or your pancakes). You may need to add more or less milk to be sure you have a batter like consistency. The flax will soak up a bit more liquid.
- Heat a your fry pan or griddle over medium-low heat. You’re ready to start cooking your pancakes once the surface of the pan is hot enough that a drop of water sizzles on contact.
- If necessary, lightly oil the cooking surface with additional oil or cooking spray

Pour the batter
onto the pan….I usually spread it out a little to ensure even cooking and that the pancakes are not too thick…this will depend on the consistency of your batter.
- Cook for 2 to 3 minutes until the pan side is turning brown and flip. Cook on the opposite sides for 1 to 2 minutes, or until golden brown.
- Repeat the process with the remaining batter, adding more oil as needed. You may need to adjust the heat up or down at this point. Serve the pancakes immediately or keep warm in a 250° oven.

Serve hot with berries, maple syrup (my favourite) or a combination of the two.
