Start with…
- 5 stalks of celery, chopped
- 2 medium onions, chopped
- Sauté till transparent
Add in
- 1/2 cup raw cashews
- 10 oz shiitake, chopped, sautéed
- 3 tablespoons nutritional yeast
- 16 oz cremini mushrooms, chopped, sautéed
- 2 garlic, minced
Add
- 1 tsp bouillon with one-quart water
- 1 tablespoon dried thyme
- Salt and pepper
- Pressure cook for 12 minutes
Taste adjust spices
- Blend with the Emerson blender
- Add a Splash of red wine vinegar
- Add 2 cans of coconut milk
- Mix again.
Garnish with
- Plain unflavoured Yogurt & croutons
