Cream of mushroom soup

Start with… 

  • 5 stalks of celery, chopped 
  • 2 medium onions, chopped 
  • Sauté till transparent

Add in

  • 1/2 cup raw cashews 
  • 10 oz shiitake, chopped, sautéed 
  • 3 tablespoons nutritional yeast 
  • 16 oz cremini mushrooms, chopped, sautéed 
  • 2 garlic, minced

Add

  • 1 tsp bouillon with one-quart water 
  • 1 tablespoon dried thyme 
  • Salt and pepper 
  • Pressure cook for 12 minutes 

Taste adjust spices 

  • Blend with the Emerson blender 
  • Add a Splash of red wine vinegar 
  • Add 2 cans of coconut milk 
  • Mix again. 

Garnish with 

  • Plain unflavoured Yogurt & croutons
