
Chocolate Coconut Energy Balls
Chocolate coconut energy balls might be just what your looking for. Great for snacks, quick pick me ups, kids, camping, travel and just for fun!
These chocolate coconut energy balls are easy to make. Kids would love to get in there and help you too! Fun for the whole family. The great thing is they have no added sugar, are gluten and dairy free and of course vegan!

Chocolate Coconut Energy Balls
What you’ll need for your Chocolate Coconut Energy Balls:
- 1/3 c quinoa
- 2/3 c water
- 16 medjool dates
- 1 c raw almonds (save 1/4 c for outside)
- 1/4 c hemp hearts
- 2/3 c coconut (save 1/3 c for outside)
- 1/2 c smooth peanut butter (any type of nut butter will do)
Hemp hearts – nutty packed protein…I like it by the spoonful too! - 1/3 c dark chocolate chips (check to be sure they are vegan)
- Tiny bit of salt
How to make your Chocolate Coconut Energy Balls
- Cook the quinoa in water until ready. Keep the cooked quinoa warm it will help melt the chocolate chips
- Crush the raw almonds in a food processor until they grainy flour like consistency
- Pit your dates and add them to the food processor. Pulse until they are also finely chopped and the mixture starts to ball together.
Crushed almonds, medjool dates, coconut, salt…all processed together. - Add the hot cooked quinoa, salt, peanut butter, coconut and the chocolate chips.
- Pulse until the mixture balls up around the blade and the chocolate has melted. It will be fairly thick and smooth.
- Fold the hemp hearts into the misture

After you’ve mixed in the hemp hearts, scoop your mixture and roll into 1″ balls Scoop the mixture with a spoon and roll into balls about 1 inch size
- Roll each ball in the crushed almonds and/or coconut until nicely coated
Put the extra almond meal and the coconut flakes onto plates to roll your energy balls in (optional) - Place the coated energy balls on a pan with parchment paper and refrigerate for an hour
