Cheesy Vegan Tofu Scramble
For food lovers, giving up eggs seems impossible. How can they cook? How will they bake? What will they eat for breakfast on those lazy mornings?

So you want some cheesy scramble for breakfast? Absolutely a family favourite for sure. So easy to change this recipe up and veganize it by simply swapping out all the dairy products with vegan friendly substitutes. The flavour and texture just might surprise you.

Cheesy Vegan Tofu Scramble
What you’ll need to make your Cheesy Vegan Tofu Scramble:
- 1 T olive oil
- 1 block of tofu, chopped up into small pieces
- 1/2 onion, diced
- 2-4 cloves of garlic, minced
- 5-6 mushrooms, sliced
- 1/2 red pepper, diced
- 2 T vegan cream cheese – I use the Tofutti brand
- 2 T vegan sour cream – I use Tofutti brand
- 1 Roma tomato, diced
- 2 -3 big handfuls of spinach
- 1/2-1 c Vegan cheese, grated or already in shreds
How to make your Cheesy Vegan Tofu Scramble:
Before you start to cook your tofu scramble, have the remainder of your meal ready to go as it won’t take long and is best served nice and pipping hot!

Heat up a large fry pan and add in a bit of olive oil
- Add in the onions and saute for a couple minutes, add in the garlic and continue to saute till the onion is transparent
- Keep the pan hot and add in the mushrooms and saute till golden brown (you can take the onions and garlic out if you think they might burn, add them back in when the mushrooms are cooked)
- Add in the red pepper, saute for another minute
- Add in the tomato and spinach, continue to saute until the spinach is slightly wilted
- Stir in the cream cheese and sour cream to make a creamy sauce
- Add in your vegan shredded cheese, stir till melted, should be a little gooey!
- Add salt and pepper to taste
Serve with your favourite toast, golden baked potatoes and fresh fruit. Perfect!
