These little cheesy vegan potato patties with peas are amazing! If you are like me and prefer to use of leftovers, rather than throw them away…you will love this recipe!
My husband Brent is the real expert in this area…he created the ones in the pictures and they were soooo good! I think everyone will love these patties and they put a little Bam into your day! Eat them alone, add a salad, some veggies and away you go.
First thing you gotta do is…..
Cheesy Vegan Potato Patties with Peas
The first thing you gotta do is get some leftovers out of the fridge….start with potatoes. Any type of potato would do…yellow, red, russet…boiled, mashed, baked…what ever you have.
What you’ll need:
- Equivalent of 2 – 3 large potatoes (leftover) (mashed)
- 1 c cooked peas (either leftover or cook up some frozen peas)
- 1/2 – 1 c chopped onion
- 1 – 2 T mayonaise (I have an awesome recipe vegan mayo on my blog)
- 1/2 c Daiya Cheese Shreds (add more if you love cheese)
- Salt and pepper to taste
- Oil for frying the patties
How to make:

Chop and sauté onions in a bit of oil till starting to brown
- Mash up your potatoes in a large bowl
- Add cooked onions, peas, mayo and cheese and mix up gently (do not mash together)
- Add salt and pepper to taste
- Heat up skillet with a bit of oil to keep the patties from sticking
- Split the mixture into equal amounts and form into patties, the thickness and size of your liking

Place patties onto heated pan and cook till golden brown on one side, flip and repeat.
- Serve hot cheesy patties with a side salad, toast and jam, fresh fruit…what ever you like.
