Wow my husband is an amazing cook! He’s always throwing meals together in a few minutes and I have to say this Spicy Stir Fry was hot!! I mean it it was hot – spicy hot! So good I wanted to share with all of you!
Spicy Stir Fry
What you will need:
- 1 large onion – diced
- 1.5 T olive oil
- 1 large red pepper – sliced
- 6 fresh small ripe tomatoes (cut into quarters)
- 2 c broccoli tops
- 1 T hot dry chilli peppers
- 3/4 cup water
- 4 T Bragg Soy Seasoning
- 2 – 3 T Peanut Butter
- 1 can coconut milk
- 1 can chickpeas, rinsed or sliced medium firm tofu
Method for making the stir fry:
Heat up a large fry pan on the stove and add in the olive oil. When good and hot, add in your onions and sauté until transparent. Add in your red pepper, broccoli tops. Add the soy seasoning to your water and pour into your hot pan. This will steam off and cook the other veggies quickly. While they are cooking, add in the peanut butter and stir to mix. Add in tofu or chickpeas for protein.
When the veggies are cooked, about 4-5 minutes ,hot chilli peppers, fresh tomatoes and coconut milk. Stir to mix and you are ready to eat!! Its that fast!
Serve with rice or pasta, or a salad, your choice. Thanks Brent!
