Veggie Burgers Black Beans Beets Sweet Potato
Veggie Burgers Black Beans Beets Sweet Potato! Yep you’re right, everything but the kitchen sink! Wait till you see the rest of the ingredients!
Just got a little BBQ and am so excited about making up some vegan friendly BBQ snacks and meals! I planned to use the new BBQ and then we had the wrong connector, so made these in the oven. I think they would hold up on the BBQ just fine.
What you’ll also find in this post are two sauce recipes. One is for the burger, like the special sauce you get on your burger in a fast food joint. T
The second is my home made BBQ sauce, love the home made sauce so much more than store bought.
So let’s go and see how to make these crazy burgers and yummy sauces….
Veggie Burgers Black Beans Beets Sweet Potato
We’ll start out with the burgers and then finish the post with the two awesome sauces.
This recipe will make about 12 good size patties, cut in half if you want less. We had the leftovers in burritos, on a salad and of course I had another burger, they were so good.
What you’ll need for your Veggie Burgers with Black Bean, Beets and Sweet Potato
- 2 cans black bean, rinsed
- 2 c sweet potato (grated)
- 2 c beet (grated)
- ½ – 1 c onion
- 4 cremini mushrooms – chopped
- 1 Portobello mushroom – chopped
- 4 garlic cloves
- 2 /t Bragg Soy Seasoning
- 1 c rolled oats
- 1 c Panko crumbs (any bread crumbs will do)
- 2 Chia eggs
- ½ – 1 bunch of fresh cilantro (chopped fine)
- 2 T ground flaxseed
- 2 T Nutritional yeast
- 4 T sriachi sauce
- ½-1 T Cumin
- 1 t smoked paprika
- 1 t salt
- 1 t pepper
How to make your Veggie Burgers with Black Bean, Beets and Sweet Potato
- Preheat oven to 425º or Fire up the BBQ
- Rinse black beans thoroughly
- Chop up mushrooms and grate beet and sweet potato (makes it easier for the food processor)
- Place 2 T of ground Chia into 6 T of water and set aside (I grind my chia in my coffee grinder)
- Dice onion (easier for processor)
- Add the black beans into the processor and mix up as much as possible, put in a bowl
- Throw the onion, peeled garlic, mushrooms and grated beets and sweet potato in the food processor and mix until as mushy as you can get them, put in the bowl with the beans
- Add in all the remaining ingredients and mix up thoroughly. I got in there with my hands to make sure it got mixed together properly
- Form your patties to the size and thickness you prefer and place on cookie sheet that is coated with coconut or your favourite oil
- Baste with BBQ sauce, I made my own…ingredients to follow or use your favourite store bought sauce.
- Place burgers in the preheated oven or on BBQ, cook for about 15-20 minutes, turn, baste other side and cook for another 10-15 minutes. You are trying to get a bit of a crunch on the outside of the burger
- Remove from oven when done and serve with or without a bun and all your favourite fixins
Fixins for your Burger – choose any of these extras to load up your burger with flavour. Personally I like them all so I have to wear an apron when I eat and have lots of napkins too!
For fixins I use…
- A great bun – don’t cheap out on the bun! It is a big part of the taste!
- Pickles
- Sliced tomatoes
- Lettuce
- Avocado slices
- Red onion slices
- Ketchup, mustard, relish
- Special sauce (recipe below)
