Baked sweet savoury Roma tomatoes….sounds delish, right?
Who doesn’t love baked tomatoes? If you don’t this recipe might just change your mind.
These yummy delights are a great addition to any meal, breakfast, lunch or dinner. You can bake them in the oven or on the grill. Imagine how awesome it would be if your tomatoes were fresh from your garden or your local farmer’s market. Bonus!
Now this won’t take much time at all…….
What you’ll need for your Baked Sweet Savoury Roma Tomatoes
- 3-4 fresh Roma tomatoes
Nice juicy Roma tomatoes – fresh from your garden, the market or your local grocer. - 1 T Maple syrup
- 1 T Olive oil
- 1 T Balsamic vinegar
- 1/2 t oregano
- 1/2 c Panko bread crumbs
- 1/3 c Nutritional yeast
How to make your Baked Sweet Savoury Roma Tomatoes
- Preheat oven to 450°
- Wash your tomatoes and cut in half lengthwise and place in a baking pan
- Mix together the maple syrup, olive oil and
Sauce for basting ready to go! balsamic vinegar, mix thourghly
- Brush the mixture onto the tomatoes and let sit for 20 minutes
- Add a little salt and pepper (optional)
Roma tomatoes covered in sauce and ready for the final topping. - Combine the Panko crumbs and nutritional yeast and mix
Panko crumbs and nutritional yeast for the topping – adds crunch and flavour. - Spoon the mixture on each tomato
Marinated tomatoes with panko crumb and nutritional yeast topping – ready to pop in the hot oven. - Place in the oven for 10 minutes until and reduce heat to 350°
- Bake till golden brown on top
If you wanted to be more creative, try adding a favourite spice to boost up the flavour. I was thinking I might try some oregano or rosemary, maybe basil…mmmmm…something to think about for next time.
