Apple Salad with Coconut Cream This salad is a remake of a salad we used to have when we were kids. We always thought we were getting away with something, eating dessert for dinner. It was a staple at all festive occasions and especially loved by the kids.
I took the base recipe and updated it, veganized it, made it more contemporary and healthy version all around. I hope you like it and feel you are getting away with something too!
Apple Salad with Coconut Cream
What you’ll need for your Apple Salad with Coconut Cream:

4 medium sized apples, peeled – 3 cups of slices (Gala, Fiji, Braemore…juicy, crispy and sweet)
- 1/4-1/2 t ginger juice (squeezed through a garlic press)
- 1/2-2/3 c organic raisins
- 1/4 c raw sunflower seeds
- 1/4 c walnuts, crushed
- 1/4 c hemp hearts
How to make your Apple Salad with Coconut Cream
For this recipe, get all the components ready to assemble, the apples, the toppings and the whipped coconut cream. **Tip In you are looking for an alternative to whipped coconut cream; you can use coconut milk ice cream slightly melted (So far I like Bliss brand best).
- Prep all the add on ingredients – measure and put into a container to add later – raisins, seeds, walnuts and hemp hearts and set aside
- Prep the coconut cream as per instructions below.
- Peel (optional) your apples and cut your apples into bite size pieces or slices
- Rinse slices and place the apples in a large mixing bowl
- Add in ginger juice, toss to coat evenly
- Just before serving, fold in the whipped coconut cream or slightly melted coconut icecream into the apples and coat evenly
- All the raisins, seeds, hemp hearts and mix again
- Sprinkle the walnuts on top
- Serve in a salad bowl or in small individual salad cups that people can choose from your buffet
What you will need for the Whipped Coconut Topping
- One can full fat coconut milk
- 1 t vanilla
- 2 T maple syrup
- 2 T coconut sugar
- Place your can of coconut milk in the freezer for a least an hour, place your beaters from your mixer in the freezer too
- When the can is frozen, open both ends and pour our the liquid from one end
- Then you will be able to push the hard solid piece of coconut milk out and into your bowl
- Take your beaters out and whip up the coconut milk, it takes awhile
- When it gets really smooth, add in your sugar, maple syrup and vanilla and beat some more
- Store in fridge till ready to use
