
Tonight I made such a delicious and simple vegan meal. It started out by slicing up a brick of organic tofu and marinating it in in Bragg Liquid Soy Seasoning, sliced ginger and minced garlic!


I let the tofu sit in the fridge for a few hours to help the tofu absorb all the wonderful flavours of the Bragg, the garlic and ginger.

Once the tofu had marinated for a few hours, I sliced up a Portobello mushroom and sautéed the tofu and the mushroom in the marinate until they were cooked to perfection.

While the sauté was sautéing, I cooked up some whole grain rice in the rice cooker and steamed some beautiful Swiss chard from my garden. When the chard was steamed, I added a bit of vegan margarine and a dash of red wine vinegar to give it a bit of kick. The last part of my meal comprised of some carrot sticks to add both colour and texture to the meal.
Simple and yet so nutritious and delicious. A wonderful meal for any night of the week.
